Vegetable Soup
My favorite vegetable soup, nutritive, low calories, and my top one for a busy day as well as for maintaining a healthy diet. It will be good for a single dish meal or complement a secondary dish.

Step 1
Cut all vegetables in medium pieces
Step 2
Add water into a big pot and place vegetables in the water and save cilantro and spinash for later use.
Step 3
Once the vegetables are soft add salt, taste and add more if you wish, you can add more condiments as well.
Step 4
Add spinash, cilantro, and put the lid on, keep cooking at low temp for 5 more min.
Step 5
Let it rest a few minutes, blend it, serve, and enjoy it
4 cups of water
3-4 succhini
1 green peper
1 onion
1 cup of spinach
1 cup of cilantro
2 carrots
2 spoons of cut garlic
1 teaspoon of salt
hand blender or regular blender
large heavy pot with lid
measuring spoons
measuring cups
